Certainly! Balatong is a Filipino dish made from mung beans, also known as green gram or golden gram. It is typically cooked into a hearty soup or stew. Here's a traditional recipe for balatong:

Ingredients:
  • 1 cup mung beans
  • 1 tablespoon cooking oil
  • 1 medium onion, chopped
  • 4 cloves of garlic, minced

Instructions:
1. Rinse the mung beans thoroughly in cold water. Soak them in water for about 1 to 2 hours, or overnight for best results. Drain and set aside.
2. In a large pot, heat the cooking oil over medium heat. Sauté the onions and garlic until fragrant and translucent.
3. Add the diced tomatoes and cook until they soften and release their juices.
4. If using pork or chicken, add the diced meat to the pot and cook until it gets lightly browned.
5. Add the drained mung beans to the pot and stir to combine with the other ingredients.
6. Pour in the water and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot partially. Let it simmer for about 45 minutes to 1 hour, or until the mung beans are tender and starting to break apart.
7. If desired, add the Knorr pork or chicken cube for additional flavor. Stir until dissolved.
8. Season with salt and pepper to taste. You can also add fish sauce or soy sauce to enhance the flavor, depending on your preference.
9. If using spinach or kangkong leaves, add them to the pot and cook for another 3 to 5 minutes, until wilted.
10. Serve hot with steamed rice, and garnish with calamansi or lemon wedges on the side for squeezing over the soup.
