Ingredients:
  • 1 pound dried black beans
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1 green bell pepper, chopped

  • 2 tablespoons olive oil

Instructions:
1. Start by rinsing the black beans under cold water and removing any debris or stones. Then, place them in a large bowl and cover with water. Allow the beans to soak overnight or for at least 8 hours. Drain and rinse before cooking.

2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, garlic, bell pepper, and jalapeno pepper (if using). Sauté until the vegetables become tender and fragrant, usually around 5 minutes.

3. Add the cumin, chili powder, and dried oregano to the pot. Stir well to coat the vegetables with the spices, and cook for another minute to enhance the flavors.
