Mini Cheesecake

Ingredients:
  • Cream cheese 8 oz
  • Sugar 1/2 cup
  • Eggs 2
  • Vanilla essence 2 tsp
  • Whole cøøkíés 6
  • Hot fudge or Chocolate syrup as required
  • Whipped cream as required
  • cøøkíé crumbs for garnish
Method:
  1. Place cupcake liners in muffin tins.
  2. Set whole cøøkíé in bottom on each liner.
  3. Beat together cream cheese, sugar and vanilla until smooth.
  4. Add eggs, one at a time, mixing until just blended.
  5. Gently fold in crushed cøøkíés.
  6. Spoon cheesecake mixture over each cøøkíé in liners.
  7. Bake at 180 degrees C for 15-20 minutes or until center of each cheesecake is almonds set.
  8. Cool completely and refrigerate at least one hour or overnight.
  9. Top with dollop of whipped cream , drizzle chocolate sauce and sprinkle crushed cøøkíés on top.
