Food and Recipe Ground Lamb Salad

  1. Ground Lamb Salad
    This refreshing way to enjoy lamb is a perfect salad dish. Serve hot while the flavors of the herbs are at their best.

    Prep and Cook Time:
    20 minutes

    Ingredients:

    • 1 TBS low sodium chicken or vegetable broth
    • 4 medium cloves Please or Register to view links
    • 3/4 lb ground lamb
    • 1 cup frozen peas
    • 1 medium tomato peeled, seeded and Please or Register to view links

    • 1 TBS fresh lemon juice
    • 1 head butter lettuce
    • salt and pepper to taste
    Directions:

    1. Heat 1 TBS broth in a 10 inch stainless steel skillet and Please or Register to view linksonion for 2 minutes and add garlic and ground lamb. Break up lamb well so it is not in big lumps. Continue to sauté for another 5 minutes.
    2. Add peas, salt and pepper and cook for another 2-3 minutes, and add tomatoes, chopped fresh mint, basil, cilantro, lemon juice.
    3. Rinse and dry lettuce leaves discarding wilted outer leaves. Place on platter and fill with spoonful of lamb mixture. Roll by hand and eat.
