DINUGUANG BAKA
NOTE : this is a kampampangan recipe of dinuguan. You can use pork or chicken with the same recipe..
Ingredients:
1 kilo of beef
4 tbsp oil
3 tbsp crushed garlic
1½ c sliced onions
1 c vinegar
4-8 c broth or water
½ k pig's blood diced
Siling pansinigang 6-8 pcs, whole
Salt and pepper
3 bay leaves
2 sprig of thyme
3 TSP of sugar
Procedure:
Saute garlic and onions in oil.
Add meats.
Add water 2-4 cups, depending on how thick you want the sauce. Add laurel and oregano, let it simmer until meat is tender Add vinegar and sugar. Add blood. You will know blood is cooked when it is no longer red.
Add salt and pepper to taste and add siling pangsigang.
Simmer 10-15 minutes over low heat until it thickens....Enjoy
